Lund Center, Gustavus’ fitness center that holds both the Gus Young basketball court and Don Roberts ice rink, was named after Russell Lund, Rhoda Lund, as well as Patricia Hays Lund. Russell Lund was an entrepreneur. He got started in the grocery business in 1922, working part-time at Hoves, a small Minneapolis grocery store. In three months, Lund was a full-time employee as well as a 10% partner in the cracker and cheese department. After experimenting with pre-popped popcorn, he opened his Red E Popt Popcorn Company, guaranteeing his customers satisfaction by agreeing to “cheerfully refund your money” if you were not happy with the product. Lund rejoined Hoves in 1939 and became a full partner in the store’s perishable department. Soon after, Lund built one of the first self-service grocery stores in the area using the Hoves name. When the Hoves stores’ lease expired in 1964, Lund changed the name of his stores to Lund’s. Russell Lund died in 1992, but his chain of grocery stores is still around today. After merging with Byerly’s, there are a combined 22 stores.
